Banana Cookies

We had an abundance of ripe bananas in the freezer and a lack of cookies in the cabinet.
Ingredients
- 1/2 cup butter room temp (unsalted okay)
- 1 cup sugar
- 1 egg room temp
- 1 cup mashed bananas (about 2 1/2 bananas)
- 1 tsp baking soda
- 2 cups flour all-purpose
- pinch salt
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cloves
- 1 cup walnuts, chocolate chips or raisins pecans good too; chop the nuts
Instructions
- Pre heat oven to 350 degrees
- Cream together butter and sugar until light and fluffy. Add egg and continue to beat until the mixture is light and fluffy.
- In a separate bowl, mix the mashed bananas and baking soda. Let sit for 2 minutes. The baking soda will react with the acid in the bananas which in turn will give the cookies their lift and rise.
- Mix the banana mixture into the butter mixture.
- Whisk together flour, salt, and spices. Add to the butter and banana mixture and mix until just combined.
- Fold in nuts, chips or raisins.
- Drop in dollops onto parchment paper-line baking sheet. Bake for 13-15 minutes or until nicely golden brown. Let cool on wire racks.
Note: original recipe said 11 to 13 minutes but mine took a full 15. Even with medium-large dollops, the recipe made 36+ cookies.
You could also easily fill these with a cream cheese whoopie pie filling and make whoopie pies with them.
