Vegan Tofu, Asparagus and Spinach Scramble

Ingredients
- 1 14 oz pack firm tofu drained and cut into 1/2 inch cubes
- 1/2 teaspoon tumeric
- to taste salt and pepper
- 2 tablespoons olive oil
- 4 green onions sliced
- 2 packed cups baby spinach chopped
- 2 cups asparagus chopped
- 1 to 2 teaspoons lemon juice
- 1 cup grape tomatoes halved
Instructions
- Heat the oil in saucepan over medium-high heat. Add the green onions (and a little garlic) and cook, stirring, until soft, about 1 minute.
- Add all the rest of the ingredients, stir to combine and cook for about 5 to 10 minutes.
